Ingredients

  • ¼ cup extra virgin olive oil.
  • 1 medium yellow onion, finely chopped.
  • 4 garlic cloves, minced.
  • 1 tablespoon peperoncino, or more to taste.
  • 1 (28 ounces) can crushed tomatoes.
  • 1 bay leaf
  • Kosher salt, to taste.
  • Ground black pepper, to taste.
  • 1 pound spaghetti.
  • Fresh Basil leaves for garnish.
  • ½ cup high-proof alcohol (Must be 21+ to flambé).

Directions

  1. Boil a large pot of salted water, then cover with a lid.
  2. Add olive oil, onions, and a big pinch of salt over medium heat in a large Dutch oven.
  3. Stir and cook for 8 – 10 minutes or until the onions are slightly brown on the edges.
  4. Add garlic and pepperoncini into the Dutch oven and stir.
  5. Cook for 1 – 2 minutes or until fragrant.
  6. Add crushed tomatoes and the bay leaf.
  7. Stir to combine and bring to a low simmer.
  8. Taste and season with salt and pepper to taste. Use sugar if needed.
  9. Cover and simmer while the pasta cooks.
  10. Cook the pasta until al dente in the boiling water.
  11. Transfer the pasta directly into the simmering sauce using tongs and stir until the sauce covers the pasta noodles.
